Jollof rice is a dish that Ghanaians pride themselves on. There have been many an argument over who’s Jollof rice is the best. Dare I go deeper and mention the Jollof rivalry between Ghana and Nigeria??? Nah I won’t mention it.
I’ve come to realise that no 2 plates of Jollof rice are the same. Some like it very dark in colour, some like it so the grains are neatly separated, some like it spicy and some like it with meat. Whichever way you like it my mums Jollof is the best lol.
On a seious note, I believe every African country has its own version of Jollof rice. There is no right or wrong way to make it and that’s what I love about Jollof. You can absolutely get creative with it.
Essentially Jollof is just rice with stew cooked into it. Similar to pizza being a glorified cheese on toast. It’s all about how you dress it up. Jollof is one of my favourite dishes and you can’t go wrong by adding a bit of chicken/ fish and some plantain on the side. Yum!
